help with True Image from hard drive to dvd?

Hope someone can help with this. I keep getting referred from software company to software company.
If I make an image on a dedicated partition (no problem there) and check that it's accurate (new utility on Acronis site); what is the best way to burn a back-up copy to dvd (+/- r/rw) using Nero?
First image wasn't split- so Nero told me to use UDF- is this okay? I made a second image- split in cd-r size sizes (wasn't sure ideal size for dvd) and burned with nero onto 2 disks , used UDF again.

I thought it was better to use ISO format? So would a near dvd size splits- to hard drive- burn as iso files be a better way to do this? Sorry for a newbie type question - just recently bought a dvd burner. Thanks for any help- onestep :?
